At Grey Stack, we make cool climate, French varietals (even though one comes from Italy) that are ideally suited to our climate in Bennett Valley and Dry Stack Vineyard and made (mostly) with food in mind. For some of the varieties we grow, such as Syrah and Grenache, Dry Stack Vineyard is on the very edge of being too cool. We farm mindfully and sustainably and we make our wines with as little intervention as possible - without being overly dogmatic. We believe it is our job to take the best the vineyard has to offer and bring it to to the bottle as directly as possible while being mindful of the 1,000 year winemaking tradition we are the extension of. We bottle unfiltered and unfined (most of the time) and use indigenous yeasts (most of the time).

We try to make wines that reflect the unique character of Bennett Valley, even if that isn't always 'stylish' - that is, we try to get out of the way and let the grapes tell us the wine that needs to be made. W reject the use of heavily toasted barrels as too heavy handed and imparting too much flavor and masking the wines character.But we do believe in maturative and integrative ability of new oak. We think the current trend away from new oak gives up much of the finese and texture that our wines of capable of.
